Position Summary
This position will be used to fill one part-time (a maximum of 24 hours per week) Student Technical Assistant position for the Department of Food Science and Technology (FST) at Oregon State University (OSU).

Performs research in support of academic faculty Zeynep Atamer’s research program. This undergrad research project will focus on the following main objectives: isolation of milk proteins, specifically beta-casein, determination of depletion kinetics of beta-casein fraction andprotein analysis using high-performance liquid chromatography (HPLC) as well as testing some techno-functional properties (e.g., foaming, emulsifying, stability, adhesion, encapsulation). Additionally, the project will involve responsibilities at the new dairy plant, such as cheese production, gaining an understanding of cheese processing technology, and assisting with the organization of a cheese-making course, which will take place on October 8-9, 2025.

Position Duties
The undergraduate student will actively participate in a protein fractionation and analysis research project, as well as in various dairy production at OSU’s new dairy pilot plant.

Responsibilities will include:
  • Isolation of milk proteins
  • Determination of beta-casein depletion kinetics
  • Protein and protein fraction analysis using HPLC
  • Testing functionality of protein fractions (e.g., foaming, emulsifying, stability, adhesion, encapsulation)
  • Performing data analysis and preparing reports
  • Learning fundamentals of cheese-making and production of cheese samples (e.g., feta, mozzarella)
  • Assisting with the organization of the cheese-making course (October 8-9, 2025, at the new dairy pilot plant)
Minimum Qualifications
  • Must be academically enrolled in a high school, community college, or university and pursuing a program or course of study
  • Must meet Academic Standing Requirements; students on academic suspension are not eligible for employment
  • Must meet the applicable minimal enrollment standard
    • High School student: Regularly enrolled in a high school or participating in a home-schooling program
    • Undergraduate and post-baccalaureate student: 6 credit hours per term
    • Undergraduate international student: 12 credit hours per term*
    • Graduate student officially admitted to Graduate School: 5 credit hours per term
    • Graduate international student officially admitted to Graduate School: 9 credit hours per term*

*International students may be allowed to carry fewer hours than specified above and still be considered “full-time” by the United States Citizenship and Immigration Services (USCIS). A reduced course load is approved by the Office of International Services (OIS), and must be provided to the Student Employment Center.
Additional Required Qualifications
Basic lab skills and the ability to use a computer for data analysis and reporting will be required.
Preferred (Special) Qualifications
An interest in dairy science and technology, along with strong communication, computer, and organizational skills, is preferred.
Working Conditions / Work Schedule

  • May require working with around chemicals, caustic compounds and hazardous materials.
